4 large bell peppers
1 lb ground turkey (93 percent lean)
1 tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
1.5 cups cooked rice
1 can black beans, rinsed and drained
2 tbsp taco seasoning
1 cup shredded cheddar or Monterey Jack cheese
1/4 cup fresh cilantro (optional garnish)


Instructions

Preheat your oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper.
Slice the tops off the bell peppers, removing the seeds and inner membranes.
Blanch the peppers in boiling water for 3 minutes, then shock them in cold water to keep them firm and bright.
Heat olive oil in a large skillet over medium heat and sauté the diced onions until translucent.
Add the ground turkey to the skillet and cook until browned, using a wooden spoon to crumble the meat.
Stir in the minced garlic and taco seasoning, cooking for another minute until fragrant.
Fold in the cooked rice and drained black beans, mixing thoroughly.
Stuff each blanched bell pepper with the turkey mixture until full.
Arrange the peppers on the prepared baking sheet and top with shredded cheese.
Bake for 35 minutes until the peppers are tender and the cheese is melted and golden.

Notes
