1 large yellow onion, diced
3 cloves garlic, minced
2 medium carrots, sliced
2 stalks celery, chopped
8 cups low sodium chicken broth
8 oz egg noodles
1/4 cup Parmesan cheese, grated
1 tsp dried thyme
Black pepper to taste


Instructions

Heat olive oil in a large stockpot over medium heat.
Add onion, carrots, and celery, sautéing for five to seven minutes until softened.
Stir in garlic and cook for one additional minute.
Add ground turkey, breaking it up with a spoon until browned.
Pour in chicken broth and bring to a gentle boil.
Reduce heat to a simmer, add thyme and pepper, and cover for fifteen minutes.
Add egg noodles to the pot and cook according to package instructions until al dente.
Remove from heat and stir in grated Parmesan cheese before serving.

Notes

Substitute egg noodles with rice to make the dish gluten-free. If using pre-cooked turkey slices, add them when you add the broth to avoid overcooking the meat. Store leftovers in an airtight container in the refrigerator for up to three days.
