Ingredients

1 lb Ground Turkey (93/7 blend)
2 tbsp Extra virgin olive oil
1 cup Yellow onion, finely diced
3 cloves Garlic, minced
2 cups Cooked brown rice
2 medium Bell peppers, diced
1/2 cup Feta cheese, crumbled
1 tsp Dried oregano
1/4 cup Fresh parsley, chopped
2 cups Fresh spinach


Instructions

In a mixing bowl, combine ground turkey, half the garlic, half the onion, dried oregano, and salt.
Mix ingredients gently, then form into 1.5-inch meatballs.
Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
Sear meatballs until golden brown and cooked through, about 8-10 minutes, then remove and set aside.
In the same skillet, saute the remaining onion, garlic, and diced bell peppers until tender.
Divide the cooked brown rice and fresh spinach into four bowls.
Top each bowl with the sauteed vegetable mixture and the seared meatballs.
Finish by garnishing with crumbled feta cheese and fresh parsley.

Notes

Store in airtight containers in the refrigerator for up to 4 days. Brown rice can be substituted with quinoa for added protein. You may add a splash of lemon juice before serving to brighten the Mediterranean flavors.
