Description
A refreshing Italian-American salad with tender tortellini, spinach, cherry tomatoes, mozzarella, halal-friendly salami, and briny olives tied together by tangy Italian dressing. Light, vibrant, and ideal for picnics or weeknight meals.
Ingredients
12 oz pre-cooked cheese tortellini (halal-certified)
1 cup cherry tomatoes
6 oz mozzarella (cubed)
4 oz thinly sliced halal/turkey salami
1/2 cup black olives
4 cups fresh spinach
3–4 tbsp Italian dressing
1/4 cup optional toppings (crumbled feta, red onion, or basil)
Instructions
Heat a microwave-safe bowl and cook frozen tortellini according to package instructions (2–3 minutes). Drain thoroughly.
Halve cherry tomatoes and blot dry to remove excess moisture.
Blanch spinach in boiling water 30 seconds, shock in ice water, and pat dry.
Combine tortellini, tomatoes, mozzarella, salami, olives, and spinach in a large bowl.
Pour 3–4 tbsp Italian dressing over the salad, adjusting to taste.
Mix in optional toppings like feta or red onion.
Serve chilled or at room temperature.
Notes
Use halal-certified tortellini to avoid pork-based products.
For non-meat variations, substitute salami with roasted red peppers or mushrooms.
Blanching spinach enhances freshness and prevents sogginess.
Store surplus dressing in a sealed jar for up to 5 days.
