Description

A nutrient-dense and comforting chili that perfectly balances lean ground turkey with the natural sweetness of cubed sweet potatoes. This hearty, flavor-forward dish uses aromatic spices like cumin and chili powder to create a rich, sophisticated base. Ideal for meal prepping or family dinners, it offers a robust texture that satisfies throughout the week. Naturally pork-free and alcohol-free, this wholesome meal is as healthy as it is delicious.

Ingredients

Scale

1.5 lbs ground turkey
2 large sweet potatoes, peeled and diced into 1/2-inch cubes
2 tbsp olive oil
1 large yellow onion, finely diced
4 cloves garlic, minced
2 bell peppers, chopped
28 oz crushed tomatoes (no salt added)
2 tbsp chili powder
1 tbsp ground cumin
15 oz black beans, rinsed and drained
2 cups low-sodium vegetable broth
1 cup shredded cheddar or Monterey Jack cheese
1/4 cup fresh cilantro, chopped

Instructions

Heat olive oil in a large Dutch oven over medium heat.
Add onions and sauté until translucent, about 5 minutes.
Stir in garlic and bell peppers, cooking until softened.
Add the ground turkey to the pot, breaking it apart with a wooden spoon until browned and cooked through.
Stir in the chili powder and cumin, ensuring the turkey is well coated.
Add the diced sweet potatoes, crushed tomatoes, black beans, and vegetable broth.
Bring the mixture to a gentle boil, then reduce heat to low and cover.
Simmer for 30 to 35 minutes, or until the sweet potatoes are fork-tender and the chili has thickened.
Serve hot, garnished with shredded cheese and fresh cilantro.

Notes

The flavors in this chili improve after sitting in the refrigerator, making it an excellent candidate for meal prep. Store in airtight containers for up to 4 days.
