Ingredients
2 lbs boneless, skinless chicken thighs
1 large onion, finely diced
4 cloves garlic, minced
2 tbsp olive oil
1.5 cups tomato puree
1 cup heavy cream
2 tbsp garam masala
1 tbsp freshly grated ginger
1 cup bell peppers or peas
0.5 cup fresh cilantro or parsley for garnish
Cooked basmati rice for serving
Instructions
Heat olive oil in a skillet over medium heat and sauté the onions until translucent.
Add the minced garlic and grated ginger to the skillet and cook for one minute until fragrant.
Transfer the onion, garlic, and ginger mixture to the slow cooker.
Add the chicken thighs, tomato puree, and garam masala to the slow cooker.
Cover and cook on high for 4 hours or on low for 7 hours.
About 30 minutes before serving, stir in the heavy cream and your choice of vegetables.
