2 lbs beef chuck roast, cut into 1-inch cubes
2 tbsp olive oil
4 large russet potatoes, peeled and cubed
4 cloves garlic, minced
1 large yellow onion, roughly chopped
2 cups beef broth, low-sodium
1 tsp paprika
1/2 tsp cumin
Salt and pepper to taste
3 medium carrots, sliced into rounds


Instructions

Heat olive oil in a large skillet over medium-high heat.
Sear the beef cubes in batches until a deep brown crust forms on all sides.
Transfer the browned beef to the base of the slow cooker.
