Ingredients
1.5 lbs lean ground turkey
2 tbsp extra virgin olive oil
1 medium onion, finely diced
3 cloves garlic, minced
2 cups mixed vegetables (carrots, peas, corn)
3 lbs Yukon gold potatoes
1 cup shredded cheddar or mozzarella cheese
2 tsp dried herbs (thyme, rosemary, black pepper)
Salt to taste
Splash of milk or olive oil for potatoes
Instructions
Heat olive oil in a large skillet over medium-high heat.
Sauté diced onion until translucent, about five minutes.
Add minced garlic and cook for one minute until fragrant.
Add ground turkey to the skillet and brown thoroughly, breaking up clumps.

Boil peeled potatoes in salted water until fork-tender.
Drain potatoes and mash with milk or olive oil until smooth.
