Description

These sheet pan teriyaki chicken bowls offer a perfectly balanced, stress-free dinner solution. By roasting bite-sized chicken and crisp seasonal vegetables on a single tray, you achieve a savory, caramelized glaze with minimal cleanup. It is a fantastic zero-waste meal that pairs beautifully with fluffy jasmine or brown rice, making it perfect for busy weeknights when you need something wholesome, flavorful, and fast.

Ingredients

Scale

1.5 lbs chicken breast or thighs, cut into 1-inch cubes
2 tbsp extra virgin olive oil
4 cloves garlic, minced
1 large onion, sliced into wedges
3 cups mixed vegetables (broccoli florets, bell peppers, carrots)
1/2 cup alcohol-free teriyaki sauce
4 cups cooked jasmine or brown rice
1/2 cup sesame seeds or optional mozzarella for topping
1 tsp fresh ginger, grated
Scallions and chili flakes for garnish

Instructions

Preheat your oven to 400 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper.
In a small bowl, whisk together the teriyaki sauce, minced garlic, and freshly grated ginger.
Pat the chicken pieces dry with paper towels and place them on the baking sheet along with the vegetables and onion wedges.
Drizzle the olive oil over the mixture and toss everything until well coated.
Pour the teriyaki marinade over the chicken and vegetables and toss again to ensure an even glaze.
Spread the ingredients in a single layer on the baking sheet.
Roast in the preheated oven for 20 to 25 minutes, or until the chicken is cooked through and vegetables are tender.
Serve the roasted chicken and vegetables over bowls of warm cooked rice and garnish with scallions, sesame seeds, or chili flakes.

Notes

You can substitute any seasonal vegetables based on what you have in your refrigerator. Ensure the chicken pieces are cut to a uniform size to guarantee even cooking. If you prefer extra sauce, serve with an additional drizzle on the side.
