Ingredients
4 (6oz) cod fillets
3 tablespoons extra virgin olive oil
2 large lemons, thinly sliced and juiced
4 cloves garlic, minced
2 cups cherry tomatoes, halved
1/2 cup Kalamata olives, pitted and halved
1 pound baby potatoes, thinly sliced
1 tablespoon dried oregano
Salt and black pepper to taste
Instructions
Preheat your oven to 400 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper.
Wash and thinly slice the baby potatoes.
In a small bowl, whisk together the minced garlic, olive oil, dried oregano, salt, and black pepper.
Place the sliced potatoes on the prepared sheet pan and toss with half of the seasoned oil mixture.
Roast the potatoes for ten minutes.
