1.5 lbs Sirloin or Ribeye, cut into 1-inch cubes
1 lb Gold Potatoes, diced into 1/2-inch pieces
2 whole Bell Peppers, cut into chunks
1 medium Red Onion, sliced into wedges
6 cloves Garlic, minced finely
4 tbsp Butter, melted
2 tbsp Olive Oil, extra virgin
1 tsp Paprika, sweet or smoked
1/2 tsp Cumin, ground
Salt and Black Pepper to taste


Instructions

Preheat oven to 425 degrees Fahrenheit.
Line a large rimmed baking sheet with parchment paper.
Whisk together melted butter, olive oil, minced garlic, paprika, cumin, salt, and pepper in a small bowl.
Toss diced potatoes with one-third of the garlic butter mixture and place on the sheet pan.
Roast potatoes for 15 minutes.
Remove pan from oven and push potatoes to one side.
Add the steak bites, peppers, and onions to the empty side of the pan in a single layer.
Drizzle remaining garlic butter over the steak and vegetables.
Return to oven and roast for an additional 10-12 minutes until steak reaches desired doneness and vegetables are tender.

Notes
