Description

Enjoy the authentic, aromatic flavors of traditional Middle Eastern shawarma in this convenient, one-pan meal. By using high-heat roasting, tender chicken thighs and colorful seasonal vegetables caramelize perfectly together, creating a healthy and protein-packed dinner. It is an efficient, low-cleanup solution perfect for busy weeknights, delivering a restaurant-quality experience right from your own oven.

Ingredients

Scale

1.5 lbs boneless, skinless chicken thighs, cut into strips
3 tablespoons extra virgin olive oil
4 cloves garlic, minced
1 large red onion, sliced
2 medium bell peppers, chopped
2 medium zucchini, sliced into half-moons
1 tablespoon ground cumin
1 tablespoon smoked paprika
1 teaspoon ground turmeric
1/2 cup crumbled feta cheese
1/4 cup fresh parsley, chopped
Salt and pepper to taste

Instructions

Preheat your oven to 425°F (220°C).
In a small bowl, whisk together the olive oil, minced garlic, cumin, paprika, turmeric, salt, and pepper.
In a large mixing bowl, combine the chicken strips, onions, peppers, and zucchini.
Pour the marinade over the chicken and vegetables and toss until evenly coated.
Spread the mixture in a single layer on a large rimmed baking sheet.
Roast for 25 to 30 minutes, tossing halfway through for even browning.
Remove from the oven, garnish with crumbled feta and fresh parsley before serving.

Notes

Ensure the chicken and vegetables are in a single layer on the pan to guarantee proper roasting rather than steaming. Serve with warm pita bread or over rice for a complete meal.
