1 lb Ground Beef (15-20% fat)
3 tbsp Extra virgin olive oil
4 cloves Garlic, minced
1 medium Onion, grated
1 lb Yukon gold potatoes, cubed
2 large Bell peppers, cut into chunks
1 tsp Smoked paprika
1 tsp Ground cumin
1.5 tsp Salt
0.5 tsp Freshly cracked black pepper


Instructions

Preheat your oven to 400°F (200°C).
In a large bowl, combine ground beef, minced garlic, grated onion, half of the cumin, half of the paprika, 1 tsp salt, and pepper.
Mix gently by hand until just combined, then shape the mixture into 8 thick, elongated oval patties.
On a large sheet pan, toss the cubed potatoes and bell pepper chunks with olive oil, the remaining cumin, the remaining paprika, and the remaining 0.5 tsp salt.
Push the vegetables to the sides of the pan to create space and arrange the beef patties in the center.
Roast in the preheated oven for 25-30 minutes, or until the beef reaches an internal temperature of 160°F and vegetables are fork-tender.
Remove from the oven, let the meat rest for 5 minutes, and serve immediately.

Notes

Ensure you grate the onion and squeeze out excess moisture for the best kofta texture. You can serve this alongside a dollop of yogurt sauce or pita bread for a complete Mediterranean meal.
