Description

This Savory Mushroom Herb Stuffing is the ultimate vegetarian-friendly holiday side dish. By combining earthy cremini mushrooms with fresh aromatic herbs like sage and rosemary, it achieves a deep, umami-forward flavor profile. The use of day-old crusty bread ensures a perfect balance of a moist, succulent center and beautifully crisp edges. Tart dried cranberries provide a delightful contrast that elevates this classic dish, making it a sophisticated and crowd-pleasing centerpiece for any festive feast or celebratory dinner gathering.

Ingredients

Scale

10 cups day-old crusty bread cubes (sourdough or ciabatta)
1 pound cremini mushrooms, thinly sliced
6 tablespoons unsalted butter
1 large yellow onion, finely diced
3 large celery stalks, thinly sliced
2 tablespoons fresh sage, minced
1 tablespoon fresh rosemary, chopped
2.5 cups vegetable broth (low sodium)
1/2 cup dried cranberries

Instructions

Preheat your oven to 375 degrees Fahrenheit and grease a 9×13 inch baking dish.
Spread the bread cubes on a large rimmed baking sheet and toast them for 10 minutes until golden brown, then transfer to a large mixing bowl.
Melt the butter in a large skillet over medium-high heat.
Add the diced onion and celery, cooking until softened and translucent, about 6 minutes.
Stir in the sliced mushrooms and cook for 8 to 10 minutes until they release their liquid and begin to brown.
Add the minced sage and rosemary, stirring for 1 minute until fragrant.
Pour the vegetable broth over the mushroom mixture and simmer for 2 minutes to meld flavors.
Pour the vegetable mixture over the toasted bread cubes, add the dried cranberries, and toss gently to combine.
Transfer the mixture to the prepared baking dish and bake for 25 to 30 minutes until the top is golden and crisp.

Notes

Substitute butter with high-quality olive oil to make this recipe completely vegan. Use gluten-free bread to adapt the stuffing for a gluten-sensitive diet. Ensure the bread is day-old or slightly stale so it absorbs the broth without turning mushy.
