Description

Indulge in a rich, velvety alternative to traditional mashed potatoes with this healthy roasted garlic cauliflower mash. By slow-roasting garlic to unlock a deep, nutty sweetness and steaming the cauliflower to preserve texture, this dish provides a creamy, professional-quality side that is low in carbohydrates. Perfect for busy weeknights or as an elegant accompaniment to your favorite main courses, this recipe offers a sophisticated flavor profile that satisfies without the heavy starch.

Ingredients

Scale

1 large head cauliflower, cut into uniform florets
1 whole bulb garlic
2 tablespoons extra virgin olive oil
1 teaspoon onion powder
2 tablespoons vegetable broth
1 tablespoon fresh chives, finely chopped
1/2 teaspoon sea salt
1/4 teaspoon freshly cracked black pepper

Instructions

Preheat your oven to 400 degrees Fahrenheit.
Slice the top off the garlic bulb to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 40 minutes.
Steam the cauliflower florets until fork-tender.
Drain the cauliflower in a colander for five minutes to remove excess moisture.
Squeeze the roasted garlic cloves out of their skins into a food processor.
Add steamed cauliflower, onion powder, salt, and pepper to the processor.
Pulse while slowly drizzling in vegetable broth until a smooth, creamy consistency is achieved.
Garnish with fresh chives before serving.

Notes

Ensure cauliflower is well-drained to avoid a watery mash. The longer you let the cauliflower steam-dry in the colander, the better the final texture will be.
