Ingredients
12 oz non-GMO tortilla chips
2 lbs halal-certified lamb shoulder
1 cup shredded cheddar cheese
3/4 cup alcohol-free ketchup-based barbecue sauce
1/2 cup raw jalapeño slices
1/4 cup homogenized sour cream
1/2 cup thinly sliced red onion
Instructions
Season lamb shoulder with paprika, garlic powder, and cumin
Sear lamb in halal-friendly oil until browned
Transfer to Dutch oven with onion and garlic; add non-alcoholic bourbon substitute
Simmer lamb for 2 hours until tender
Spread tortilla chips in oven-safe dish; layer cooked lamb over chips
Spread cooled barbecue sauce over meat, top with cheese
Bake at 375°F (190°C) for 15 minutes until cheese melts
Top with jalapeños, red onion, and sour cream immediately before serving
Notes
Cool barbecue sauce before layering to maintain chip crispness
