Ingredients

Scale

8 large flour tortillas
12 large eggs
1 lb lean ground turkey
2 tbsp olive oil
3 cloves garlic, minced
1 medium yellow onion, diced
2 bell peppers, diced
2 cups spinach, chopped
1 tbsp cumin
1 tbsp chili powder
1/2 cup green salsa

Instructions

Heat the olive oil in a large skillet over medium-high heat.
Add the onions, bell peppers, and garlic to the skillet and sauté until the vegetables are softened.
Add the ground turkey to the pan, cooking until browned and fully cooked through.
Stir in the cumin and chili powder, ensuring the turkey is well seasoned.
Lower the heat and pour in the whisked eggs and chopped spinach, scrambling gently until cooked.
Stir in the green salsa to combine all flavors, then remove from heat.
Layout the tortillas and spoon the mixture evenly into the center of each one.
Fold in the sides of the tortillas and roll tightly into burritos.
Wrap each burrito in foil or air-tight wrap and refrigerate for up to 5 days.

Notes

Ensure the filling is cooled completely before rolling to prevent soggy tortillas. To reheat, remove the foil and microwave for 60-90 seconds, or heat in an air fryer at 350°F for 5-8 minutes until crispy.
