1.5 cups brown lentils, rinsed and picked over
1 can (15 oz) chickpeas, drained and rinsed
2 cups tomatoes, diced
1 large yellow onion, finely diced
4 cloves garlic, minced
2 medium carrots, sliced into rounds
6 cups vegetable broth, low sodium
2 tsp ground cumin
1 tsp smoked paprika
2 tbsp olive oil
Salt and black pepper to taste


Instructions

Heat olive oil in a large stockpot over medium heat.
Add diced onions and sauté until translucent, about 5 minutes.
Stir in minced garlic and cook for 1 minute until fragrant.
Add sliced carrots and sauté briefly to coat.
Stir in cumin and paprika, toasting for 30 seconds.
Add rinsed lentils, diced tomatoes, and vegetable broth.
Bring to a boil, then reduce heat to low.
Cover and simmer for 30 minutes until lentils are tender.
Fold in chickpeas and cook for 5 minutes to heat through.
Season with salt and pepper to taste and serve.

Notes

This soup tastes even better the next day as the flavors continue to meld in the refrigerator. Store in an airtight container for up to 4 days. You can also freeze portions for up to 3 months.
