1 lb Ground Turkey (93/7 lean)
1 medium Onion, finely diced
3 cloves Garlic, minced
2 tbsp Extra Virgin Olive Oil
1/2 cup Fresh Herbs (parsley, dill, or mint, chopped)
2 tsp Combined Spices (cumin, smoked paprika, salt, pepper)
2 cups Cooked Basmati Rice or Orzo
3 cups Fresh Vegetables (diced cucumber, halved tomatoes, pitted olives)
1/2 cup Feta Cheese, crumbled


Instructions

In a large mixing bowl, combine the ground turkey, half of the minced onion, half of the garlic, fresh herbs, salt, pepper, and spices.
Mix the ingredients gently by hand, being careful not to overwork the meat.
Form the mixture into uniform, bite-sized meatballs roughly the size of a golf ball.
Heat the olive oil in a large skillet over medium-high heat.
Sear the meatballs in the skillet, turning occasionally, until golden brown on all sides and cooked through.
Prepare the base by portioning the cooked basmati rice or orzo into four bowls.
Top bowls with the prepared meatballs and distribute the fresh cucumbers, tomatoes, and olives.
Sprinkle with crumbled feta cheese and serve warm.

Notes

You can substitute brown rice or cauliflower rice for the basmati base to adjust the carbohydrate content. Store meatballs in an airtight container in the refrigerator for up to 3 days. Add fresh vegetables just before serving for the best texture.
