Description

Triple-loader picnic sides with coleslaw, bean salad, and deviled eggs for 12. Fresh, hearty, and road-ready with layered textures and bold flavors. Perfect for outdoor feasts requiring minimal last-minute prep.

Ingredients

Scale

12 oz farfalle pasta
3 lbs boiled potatoes, 1-inch cubes
2 cups cabbage (green or red), shredded
2 cans (15 oz each) kidney beans, drained and rinsed
4 large cucumbers, sliced (use English for less moisture)
24 large hard-boiled eggs
1 cup dill pickle relish
1 cup plain Greek yogurt (or coconut yogurt for dairy-free)
1/2 cup mustard-based dressing for coleslaw
1/2 cup mustard-based dressing for bean salad
2 tbsp lemon juice
1 cup red bell pepper, diced
1 cup celery, diced

Instructions

Prep all components 1 day in advance but keep dressings separate until serving
Boil potatoes until tender, drain and cool completely
Cook farfalle pasta according to package instructions, rinse with cold water
Toss cabbage, potatoes, and farfalle with separate coleslaw dressing
In separate bowl, combine kidney beans, diced pepper, celery, and bean salad dressing
Chill all salads in sealed containers
For deviled eggs: Halve cooled hard-boiled eggs, scoop yolks into bowl
Mash yolks with Greek yogurt, lemon juice, 1 tbsp vinegar, and 2 tbsp relish each
Make ahead picnic sides ensure effortless meal prep for outdoor gatherings. These salads and deviled eggs remain fresh, flavorful, and easy to transport when constructed with the right ingredients and techniques. Separate wet/dry components for assembly just before chilling

Notes

Freeze pasta salads in airtight containers for long-term storage
Deviled eggs must be assembled last to prevent mayonnaise/egg separation
Use distilled white vinegar for precise acidity control
Add crumbled feta cheese to bean salad if desired (non-pork)
Serving in individual containers preserves freshness during transport
