Ingredients
3 lbs Russet Potatoes
1/2 cup Unsalted Butter
1 cup Sour Cream
2 cups Shredded Sharp Cheddar Cheese
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 cup Green Onions, chopped
1 cup Vegetarian Sausage, crumbled
1/2 cup Panko Breadcrumbs
2 tbsp Salt (for boiling water)
Salt and Pepper to taste
Instructions
Preheat oven to 375 degrees Fahrenheit and grease a 9×13 inch baking dish.
Peel and cut potatoes into uniform two-inch cubes.
Place potatoes in a large pot, cover with cold water, add salt, and bring to a boil.
Simmer for 15-20 minutes until tender.
Drain potatoes well and return to the warm pot for two minutes to evaporate moisture.
Mash potatoes until smooth.
Stir in butter, sour cream, garlic powder, onion powder, and half of the cheese.
Fold in the vegetarian sausage and green onions.
Spread mixture into the prepared baking dish.
Top with the remaining cheese and panko breadcrumbs.
Bake for 20 minutes until the top is golden and the cheese is bubbly.
Notes
Use Yukon Gold potatoes for a creamier consistency. For a lighter version, substitute sour cream with plain Greek yogurt. Sautéed yellow onion can be used in place of onion powder for extra depth of flavor.
