1.5 lbs chicken breast, boneless and skinless, cubed
4 large russet potatoes, peeled and diced small
2 tbsp extra virgin olive oil
3 cloves garlic, minced finely
1 medium yellow onion, diced
1 cup bell pepper, diced
1 cup full-fat sour cream
2 cups sharp cheddar cheese, shredded
1 tbsp dried parsley
1 tsp smoked paprika
Salt and black pepper to taste


Instructions

Preheat oven to 375 degrees Fahrenheit.
Cube the potatoes into half-inch pieces.
Boil potato cubes in salted water for eight minutes until partially softened.
Drain potatoes thoroughly.
Heat olive oil in a skillet over medium heat and sauté the onions and bell peppers.
Add cubed chicken, salt, pepper, and smoked paprika to the skillet; cook until chicken is no longer pink.
Stir in the minced garlic and cook for one minute.
In a large bowl, combine the cooked chicken mixture, potatoes, sour cream, and half of the cheddar cheese.
Transfer the mixture to a greased baking dish.
Top with the remaining cheddar cheese and sprinkle with dried parsley.
Bake for 35 minutes or until the cheese is bubbly and golden and potatoes are fork-tender.

Notes

Substitute dried parsley with fresh chives for a brighter flavor. Ensure potatoes are par-boiled to prevent them from staying hard during the baking process. Store leftovers in an airtight container for up to 3 days.
