Ingredients
1 lb Ground Turkey (93/7 lean ratio)
1 tbsp Olive Oil
1 large Onion, finely diced
3 cloves Garlic, minced
2 medium Bell Peppers, diced
1 can Kidney Beans, rinsed and drained
2 cups Brown Rice, cooked
1/2 cup Cheddar Cheese, shredded
2 tbsp Cumin and Chili Powder blend
1/4 cup Fresh Cilantro, chopped
Instructions
Heat olive oil in a large stockpot or dutch oven over medium-high heat.
Add the diced onions and bell peppers, sautéing until they soften.
Add the ground turkey, cooking and breaking it apart with a spoon until fully browned.
Mix in the minced garlic and spices, cooking for one minute to toast the aromatics.
Add the kidney beans and a splash of water, reducing heat to simmer for 15 minutes.
Divide the cooked brown rice into four meal prep containers.
Top the rice with the turkey chili mixture.
Sprinkle with cheddar cheese and fresh cilantro before serving or storing.
Notes
