Ingredients
2 cans (5oz each) pole-caught skipjack tuna
2 large English cucumbers
1 tbsp extra virgin olive oil
1 tbsp freshly squeezed lemon juice
1 clove garlic, minced
2 tbsp fresh parsley, chopped
1 cup cooked quinoa
Salt and cracked black pepper to taste
Instructions
Slice the cucumbers lengthwise and scoop out the center seeds with a teaspoon to create hollow boats.
Pat the inside of the cucumber boats dry with a paper towel.
Drain the tuna thoroughly and place into a medium mixing bowl.
Add olive oil, lemon juice, minced garlic, parsley, salt, and pepper to the tuna.
Fold the tuna and seasoning mixture together until well combined.
Layer the cooked quinoa into the base of each cucumber boat.
Top the quinoa with the prepared tuna mixture and serve immediately.
Notes
Store tuna mixture and cucumber boats separately in the refrigerator to prevent sogginess. Assemble just before eating. You can substitute the quinoa with brown rice or roasted chickpeas for variety.
