Ingredients

2 salmon fillets (6oz each)
2 cups cooked and chilled brown rice
2 tablespoons extra virgin olive oil
3 cloves garlic, minced
1 lemon, juiced and zested
2 tablespoons fresh dill, chopped
1 cup cucumber, diced
1 cup cherry tomatoes, halved
Salt and black pepper to taste


Instructions

Season salmon fillets on both sides with salt, pepper, and lemon zest.
Heat one tablespoon of olive oil in a non-stick pan over medium heat.
Place salmon skin-side down and cook for 4 minutes until the skin is crispy.
Flip the fish carefully and cook for an additional 3 minutes until the center flakes easily with a fork.
Remove from heat and drizzle with fresh lemon juice.
Divide the cooked brown rice into two bowls.
Layer the diced cucumbers and cherry tomatoes over the rice.
Place a prepared salmon fillet on top of each bowl and garnish with chopped fresh dill.

Notes

Ensure the salmon is pat dried with paper towels before seasoning to achieve a crispier skin. You can replace brown rice with quinoa or cauliflower rice for different nutrient profiles. Store leftovers in an airtight container for up to 2 days.
