Description

This nutrient-dense, deconstructed egg roll bowl delivers all the umami flavors of a classic takeout appetizer without the need for deep-frying or wheat-based wrappers. Featuring lean ground poultry, fresh crunchy cabbage, and aromatic seasonings, this low-carb meal is a perfect choice for muscle recovery and clean eating. It is efficient to prepare in a single pan, making it an ideal staple for healthy meal prepping and busy lifestyle routines.

Ingredients

Scale

1 lb Ground Chicken or Turkey (93% lean or higher)
16 oz Shredded Cabbage Mix
1 tbsp Olive Oil
3 cloves Garlic, minced
1/2 medium Yellow Onion, diced
1 tbsp Fresh Ginger, grated
1/4 cup Coconut Aminos (or low-sodium soy sauce)
1 tsp Sesame Oil
3 stalks Green Onions, sliced

Instructions

Heat the olive oil in a large skillet or wok over medium-high heat until shimmering.
Add the diced onion and sauté for three minutes until the edges turn translucent.
Add the ground chicken or turkey to the pan, breaking it into small crumbles with a spatula.
Cook the meat until fully browned and no longer pink.
Stir in the minced garlic and grated ginger, cooking for about 1 minute until fragrant.
Add the shredded cabbage mix to the skillet and toss well to combine with the meat mixture.
Pour the coconut aminos over the mixture and stir frequently for 5-7 minutes until the cabbage reaches your desired tenderness.
Remove from heat, stir in the sesame oil, and top with sliced green onions before serving.

Notes

Leftovers can be stored in an airtight container for up to 4 days. You can customize the dish by adding extra seasonal vegetables like shredded carrots or bell peppers. For extra heat, add a dash of sriracha or red pepper flakes when adding the coconut aminos.
