34 lbs bone-in, skin-on turkey breast
4 tbsp unsalted butter, softened
2 tbsp extra virgin olive oil
1/4 cup fresh herbs (rosemary, thyme, and parsley), chopped
4 cloves garlic, minced finely
1 large onion, roughly chopped
1 cup low-sodium chicken broth
1 tbsp kosher salt
1 tsp freshly cracked black pepper


Instructions

Remove the turkey from the refrigerator 30 minutes before cooking to reach room temperature.
Pat the turkey breast completely dry with paper towels to ensure crispy skin.
Mix the softened butter, minced garlic, chopped fresh herbs, salt, and black pepper in a small bowl until smooth.
Preheat oven to 425°F (220°C).
Carefully loosen the skin of the turkey breast with your fingers and spread half the butter mixture directly onto the meat.
Rub the remaining butter mixture and olive oil over the outside of the skin.
Place the chopped onions in the bottom of a roasting pan and set the turkey breast on top.
Pour the chicken broth into the bottom of the pan.
Roast at 425°F for 15 minutes, then reduce heat to 350°F (175°C) and roast for an additional 45 minutes or until the internal temperature reaches 165°F.
Remove from oven and let rest for 15 minutes before carving to retain juices.

Notes

Always use fresh herbs for the best aromatic results. Ensure the turkey is patted very dry to prevent steaming the skin. Rest the meat to allow juices to redistribute before slicing.
