Description
Transform sausages into a bold, flavorful meal with grilled bell peppers, caramelized onions, and a tangy mustard glaze. These sausages are smoky, juicy, and packed with umami-rich flavors that bring a satisfying texture to any occasion.
Ingredients
4 turkey sausages, 120g each (halal or fully cooked patté available)
2 red or orange bell peppers, sliced for grilling
2 medium yellow onions, halved to brown
2 tbsp mustard (combine yellow and Dijon for depth)
4 whole grain hot dog buns (unsalted)
Olive oil for grilling
Instructions
Preheat grill to 200°C (375°F). Test heat by holding a hand 5cm from the grates – should feel hot within 2 seconds.
Grill sausages 4-6 minutes, turning once, until deep golden char forms. Transfer to a baking sheet and pour mustard across the top.
Place bell peppers over direct flame until blistered (2-3 minutes). Slap cleaned under water, dry, and slice into strips.
Grill onions until sticky syrup pools (10 minutes). Remove corners for even browning.
Toast buns, cut-side down, for 1 minute. Fill with sausages, onions, and pepper strips arranged in layers.
Notes
Use a contact thermometer to check sausages – ideal internal temperature is 70°C after resting.
Mist onions with water before grilling to prevent charring.
Ensure you use halal sausages and fully cook them if uncooked.
For a gluten-free option, choose gluten-free buns.
