Ingredients
Chicken breasts, 4 (6-ounce each)
Olive oil, ¼ cup
Lemon juice, 3 tablespoons
Garlic, 4 cloves, minced
Soy sauce, 2 tablespoons
Honey, 2 tablespoons
Dijon mustard, 1 tablespoon
Salt, ½ teaspoon
Black pepper, ¼ teaspoon
Instructions
Whisk olive oil, lemon juice, garlic, soy sauce, honey, Dijon mustard, salt, and pepper in a bowl.
Place chicken in a zip-top bag and pour marinade inside. Seal and refrigerate for 30 minutes.
Preheat grill to medium-high heat (375–450°F).
Remove chicken from marinade and discard excess. Grill 4–5 inches from heat for 6–8 minutes per side or until internal temperature reaches 165°F (74°C).
Let rest 5 minutes, then serve.
Notes
Use thick-cut chicken breasts for even marination and cooking.
Substitute tamari for gluten-free soy sauce or maple syrup for honey.
Marinate no longer than 30 minutes to avoid over-tenderizing with acid.
Grill directly over heated grates for caramelized crust.
