1.5 lbs chicken breast, cut into 1-inch cubes
1 cup quinoa, uncooked
3 tbsp extra virgin olive oil
4 cloves garlic, minced
1 large English cucumber, diced
1 pint cherry tomatoes, halved
1/2 medium red onion, diced
1/2 cup feta cheese, crumbled
2 tbsp fresh lemon juice
1 tbsp dried oregano
Salt to taste


Instructions

Rinse quinoa thoroughly under cold water using a fine-mesh sieve.
Combine 1 cup quinoa with 2 cups water in a pot, bring to a boil, then simmer covered for 15 minutes. Let sit covered for 5 minutes before fluffing with a fork.
Toss cubed chicken with 2 tablespoons olive oil, minced garlic, dried oregano, and salt.
Heat a large skillet over medium-high heat and sear the chicken until golden brown and cooked through.
Remove chicken from heat and let cool.
Divide the cooked quinoa, seared chicken, cucumber, cherry tomatoes, and red onion into 4 meal prep containers.
Top with crumbled feta and a drizzle of remaining olive oil and lemon juice.

Notes

Store in airtight containers in the refrigerator for up to 4 days. You can substitute chicken breasts with chicken thighs for a moister result. Always rinse quinoa well to remove its natural bitter coating.
