Ingredients
3 lbs NY strip steak (1-inch thick)
12 bone-in chicken thighs (skin-on)
2 slabs lamb ribs
8 ears corn (husked)
2 lbs red potatoes (1.5-inch cubes)
1 cup barbecue sauce (carb-free if needed)
4 tbsp garlic butter
1 tbsp smoked paprika (divided)
Olive oil
Salt and black pepper
Instructions
Preheat grill to 450°F using premium charcoal
Mix 2 tbsp garlic butter with 1 tbsp smoked paprika for seasoning
Season chicken thighs both sides and let sit for 20 minutes
Grill lamb ribs first, sealing each side for 3-4 minutes to lock in moisture
Cook chicken thighs skin-side down for 15 minutes
Add steak to diagonal part of grill for a perfect sear
Place red potatoes in indirect heat zone, basting with olive oil
As the grill cools slightly, finish all proteins with barbecue sauce in the final 2 minutes
Grill corn in the last 10 minutes, turning regularly for even char
