1.5 lbs boneless skinless chicken breast or thighs
2 tbsp extra virgin olive oil
1 large white onion, diced
4 garlic cloves, minced
3 cans Great Northern beans, drained and rinsed
4 cups low-sodium chicken broth
1 can (4 oz) diced mild green chiles
2 cups Monterey Jack cheese, freshly shredded
1/2 cup heavy cream
1 tbsp ground cumin
1 tsp dried oregano
1 tsp chili powder
Salt to taste


Instructions

Heat olive oil in a large heavy-bottomed pot over medium heat.
Add onion and sauté until translucent, about 5 minutes.
Stir in minced garlic and cook until fragrant, about 1 minute.
Add the chicken and sear until browned on all sides.
Pour in chicken broth, green chiles, cumin, oregano, and salt.
Bring to a boil, then reduce heat and simmer until chicken is fully cooked through.
Remove chicken, shred with two forks, and return to the pot.
Stir in the beans and cook for 10 minutes to allow flavors to meld.
Reduce heat to low, stir in the heavy cream and Monterey Jack cheese until melted and smooth.
Serve warm, optionally garnished with fresh cilantro or lime.

Notes

Use a mix of both chicken thighs and breasts to achieve the best texture. If you prefer a thicker consistency, mash about 1/2 cup of the beans with a fork before adding them to the pot to naturally thicken the liquid. Store leftovers in an airtight container in the refrigerator for up to 3 days.
