Ingredients
1 lb chicken breast, diced
2 tbsp olive oil
3 cloves garlic, minced
1 medium onion, diced
4 cups fresh broccoli florets
4 cups low-sodium chicken broth
2 cups sharp cheddar cheese, freshly grated
1 cup heavy cream
1 cup cooked pasta or rice
1 tsp paprika
1/2 tsp dried thyme
Salt and pepper to taste
Instructions
Heat olive oil in a large stockpot over medium heat.
Add onion and sauté until translucent, about 5 minutes.
Stir in minced garlic and cook for 1 minute until fragrant.
Add chicken pieces seasoned with salt, pepper, paprika, and thyme; cook until browned.
Pour in chicken broth, scraping the bottom of the pot to release any browned bits.
Bring the mixture to a gentle boil, then reduce heat to a simmer.
Add broccoli florets and cook for 8 minutes until tender.
Whisk in the heavy cream and slowly fold in the grated cheddar cheese until melted and smooth.
Stir in the pre-cooked pasta or rice.
Serve hot.
Notes
Use chicken thighs for a more moisture-rich soup. For a lighter version, swap heavy cream for half-and-half. Freshly grating the cheddar cheese ensures the best melt consistency.
