1.5 cups wild rice blend, rinsed
3 cups vegetable broth
3 tablespoons unsalted butter
0.75 cup dried cranberries, roughly chopped
0.5 cup pecans, toasted and chopped
1 tablespoon fresh orange zest
1 teaspoon pure maple syrup
1 tablespoon fresh thyme, minced
Salt and pepper to taste


Instructions

Rinse the wild rice blend under cold water until the water runs clear.
Heat one tablespoon of butter in a large saucepan over medium heat.
Sauté the rinsed rice in the butter for 3 minutes until fragrant.
Add the vegetable broth and bring to a gentle boil.
Reduce heat to low, cover tightly, and simmer for 40 to 45 minutes until tender and liquid is absorbed.
Remove from heat and let rest covered for 10 minutes.
Fluff the rice with a fork and stir in the remaining butter, cranberries, pecans, orange zest, maple syrup, and fresh thyme.
Season with salt and pepper to taste and serve warm.
