Ingredients
1.5 lbs ground turkey (90% lean)
2 tbsp olive oil
3 cloves garlic, minced
1 medium onion, grated
0.5 cup breadcrumbs
2 tbsp fresh herbs (parsley or sage)
0.5 cup celery or carrot, finely diced
1.5 cups whole berry cranberry sauce
0.5 cup chicken or vegetable stock
Salt and pepper to taste
Instructions
Combine ground turkey, breadcrumbs, garlic, grated onion, herbs, diced vegetables, salt, and pepper in a large bowl.
Gently mix until just incorporated, being careful not to overwork the meat.
Form the mixture into uniform, bite-sized meatballs.
Heat olive oil in a large skillet over medium-high heat.
Sear the meatballs until browned on all sides, cooking for about 8-10 minutes.
In a separate small saucepan, combine the cranberry sauce and stock over medium heat until smooth.
Pour the glaze over the meatballs in the skillet and simmer for an additional 10-15 minutes until glazed and cooked through.
Serve warm as an appetizer or over your choice of grains.
Notes
Use 90% lean turkey for the best balance of moisture and flavor. You can prepare the glaze in advance to save time. Leftovers can be stored in an airtight container for up to 3 days. Use Panko or gluten-free breadcrumbs depending on dietary needs.
