Description

This cozy turkey pumpkin chili offers a perfect balance of savory lean protein and earthy seasonal sweetness. Ideal for autumn evenings, this one-pot meal combines ground turkey with nutrient-dense pumpkin puree, creating a thick, comforting texture without the need for heavy cream or thickeners. It is a wholesome, fast, and flavorful weeknight dinner that relies on simple pantry staples to satisfy the whole family with robust spices and vibrant ingredients.

Ingredients

Scale

1 lb ground turkey (93% lean)
2 tbsp extra virgin olive oil
1 large yellow onion, finely diced
4 garlic cloves, minced
15 oz pumpkin puree (not pie filling)
2 medium bell peppers, diced
2 tbsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
2 cups chicken broth
28 oz diced tomatoes, undrained
2 cups cooked pasta or rice (for serving)
1 cup shredded cheddar cheese (optional topping)

Instructions

Heat the olive oil in a large Dutch oven over medium-high heat until shimmering.
Add the diced onion and bell peppers to the pot and sauté until softened but not browned.
Stir in the minced garlic and cook for one additional minute until fragrant.
Add the ground turkey to the vegetable mixture and break it into small crumbles using a wooden spoon.
Cook the turkey until no pink remains and it begins to develop some color.
Stir in the chili powder, cumin, and smoked paprika, ensuring the turkey and vegetables are evenly coated.
Add the pumpkin puree, diced tomatoes with their juices, and chicken broth.
Bring the mixture to a simmer, then reduce heat to low and cover.
Cook for 20-25 minutes, stirring occasionally, until flavors have melded and the chili has thickened.
Serve hot over cooked pasta or rice with a sprinkle of shredded cheddar cheese if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. This chili also freezes exceptionally well for up to 2 months. Adjust the chili powder to your preference if you prefer a spicier kick, and use reduced broth if you prefer a thicker, stew-like consistency.
