Ingredients
Black eyed peas, pre-cooked (1 cup)
Black beans, pre-cooked (1 cup)
Roasted corn kernels (1 cup)
Roasted bell peppers, diced (1 cup)
Red onion, finely chopped (1/2 cup)
Cilantro, chopped (1/4 cup)
Italian dressing (2–3 tablespoons)
Lime juice (1 tablespoon)
Garlic powder (1/2 teaspoon)
Instructions
Rinse and drain canned black eyed peas and black beans
Finely chop red onion and cilantro
Combine beans, corn, bell peppers, and red onion in a bowl
Whisk Italian dressing with lime juice and garlic powder
Pour dressing over mixture and stir to coat
Top with cilantro and refrigerate for at least 30 minutes before serving
Notes
Use canned beans, drained and rinsed
Substitute cilantro with parsley if preferred
Store in an airtight container for up to 2 days
