2 tbsp olive oil
1 medium onion, finely diced
3 cloves garlic, minced
2 cups frozen vegetables (peas, carrots, corn)
2 cups low-sodium vegetable broth
1/3 cup all-purpose flour
1/2 cup heavy cream
1 tsp dried thyme
1 can (8-10 count) refrigerated biscuits
1 cup shredded cheddar cheese

Instructions
