Ingredients
1.5 lbs chicken breast, cubed
1 lb penne pasta
2 tbsp extra virgin olive oil
4 cloves garlic, minced
1 medium yellow onion, diced
24 oz marinara sauce
2 cups mozzarella cheese, shredded
0.5 cup parmesan cheese, grated
1 tbsp dried Italian herbs (oregano and basil)
1 large bell pepper, diced
Salt and black pepper to taste
Instructions
Preheat your oven to 375°F and lightly grease a 9×13 baking dish.
Boil the pasta in salted water for two minutes less than the package instructions indicate.
Heat olive oil in a large skillet over medium heat and sauté the onions, peppers, and garlic until softened.
Add the cubed chicken to the skillet, season with salt, pepper, and Italian herbs, and cook until golden brown.
Combine the drained pasta, cooked chicken and vegetable mixture, and marinara sauce in a large bowl and toss until evenly coated.
Transfer the mixture into the prepared baking dish.
Top evenly with the mozzarella and parmesan cheese.
Bake for 20-25 minutes or until the cheese is melted and bubbling with a slightly golden crust.
Notes
