Ingredients
3 lbs Yukon Gold Potatoes
2 cups Heavy Cream
1 cup Vegetable Stock
3 cups Sharp Cheddar, freshly shredded
4 cloves Garlic, minced
2 tbsp Fresh Thyme and Rosemary, finely chopped
Salt and Black Pepper to taste
2 tbsp Butter
Instructions
Preheat your oven to 375 degrees Fahrenheit and grease a deep 9×13 baking dish with butter.
Peel the potatoes if desired, or scrub them well, then slice them into consistent 1/8-inch thick rounds.
Combine the cream, vegetable stock, minced garlic, herbs, salt, and pepper in a medium bowl and whisk thoroughly.
Arrange one-third of the potato slices in the prepared dish, overlapping them slightly in even rows.
Sprinkle one-third of the shredded cheddar over the potatoes and pour one-third of the cream mixture over the layer.
Repeat the layering process two more times until all ingredients are used, finishing with a generous final layer of cheese.
Cover the dish tightly with foil and bake for 40 minutes to ensure the potatoes soften through their centers.
Remove the foil and continue baking for another 20 minutes until the cheese is bubbling and the top is golden brown.
Rest the potatoes for at least 15 minutes before serving to allow the sauce to set properly.
Notes
Use a mandoline slicer for perfectly uniform potato slices that cook evenly. Freshly shredding the cheddar cheese is highly recommended for superior melting compared to pre-shredded varieties. Store leftovers in an airtight container in the refrigerator for up to 3 days.
