Ingredients
Shrimp (1 lb, medium-sized)
Cajun seasoning (2 tbsp)
Olive oil (2 tbsp)
Lemon juice (1 tbsp)
Garlic (2 cloves, minced)
Fresh parsley (1 tbsp, chopped)
Instructions
Thaw the shrimp if frozen and pat dry with paper towels.
In a small bowl, combine olive oil, lemon juice, minced garlic, and half of the Cajun seasoning. Stir to create a paste.
Place shrimp in a large bowl and pour the spice-oil mixture over them. Toss until thoroughly coated.
Cover and let marinate for at least 10 minutes.
Preheat your grill to medium-high heat and brush the grates with oil to prevent sticking.
Thread the shrimp onto skewers or leave as-is. Grill for about 2-3 minutes per side, or until pink and slightly charred.
Sprinkle with the remaining Cajun seasoning and chopped parsley before serving.
Notes
For a quick swap, use avocado oil instead of olive oil. Fresh lemongrass or lime juice can be used in place of lemon juice if preferred. Serve with rice, crusty bread, or grilled vegetables for a complete meal.
