Ingredients
10 oz (280g) angel hair pasta
4 cups chopped romaine lettuce
2 (6oz) skinless chicken breasts, grilled or sautéed
1/2 cup Caesar dressing (see note)
1/2 cup croutons
1/4 cup grated Parmesan cheese
1 tsp freshly ground black pepper
Instructions
Cook pasta in salted water for 3-4 minutes, drain, rinse with cold water, and pat dry
In a large bowl, combine cooled pasta with 2 tablespoons Caesar dressing and toss to coat
Add 2 cups romaine leaves and mix thoroughly
Flake cooled chicken breast into the salad
Add remaining romaine, croutons, and remaining dressing
Toss gently, season with pepper, and chill 15-30 minutes before serving
Notes
Toast croutons for maximum crunch
Reserve pasta water to thin dressing if needed
Use buttermilk-based Caesar dressing for a lighter profile
