Description

Enjoy the comforting, hearty flavors of traditional stuffed cabbage rolls without the labor-intensive assembly. This deconstructed one-pot meal features savory browned ground beef, tender green cabbage, and fluffy rice simmered in a rich, aromatic tomato-based broth. It is a wholesome, fuss-free dinner that delivers deep, rustic satisfaction and is perfect for easy weeknight meals or efficient batch cooking.

Ingredients

Scale

1 lb ground beef (85/15 lean ratio)
4 cups green cabbage, roughly chopped
1 medium onion, diced finely
4 cloves garlic, minced
1/2 cup long grain or jasmine rice
2 tbsp extra virgin olive oil
15 oz plain, unsalted tomato sauce
6 cups low-sodium beef broth
1 tsp sweet Hungarian paprika
1/2 tsp ground cumin
Salt and pepper to taste

Instructions

Heat the olive oil in a large heavy-bottomed pot over medium-high heat.
Add the ground beef, browning thoroughly while breaking it into small crumbles, then remove with a slotted spoon.
Sauté the diced onions in the rendered fat until translucent and caramelized.
Stir in the minced garlic, paprika, and cumin, cooking for one minute until fragrant.
Return the browned beef to the pot.
Add the tomato sauce, beef broth, and rice, then bring the mixture to a simmer.
Stir in the chopped cabbage and cover.
Simmer for 20 to 25 minutes, or until the cabbage is tender and the rice is cooked through.
Season with salt and pepper to taste before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. The soup will thicken over time as the rice absorbs the broth; add a splash of water or broth when reheating if desired.
