Ingredients
2 lbs chicken breast, boneless skinless, shredded
3 lbs Yukon Gold potatoes, cubed
2 tbsp extra virgin olive oil
1 cup buffalo sauce
4 cloves garlic, minced
1 large yellow onion, diced
1/2 cup green onions, sliced
2 cups sharp cheddar cheese, shredded
1 cup mozzarella cheese, low-moisture, shredded
1 tbsp smoked paprika and parsley blend
Instructions
Preheat oven to 375 degrees Fahrenheit and grease a 9×13 inch baking dish.
Boil cubed potatoes in salted water for eight minutes until partially soft.
Drain potatoes and let them steam dry for two minutes.
Heat olive oil in a skillet and sauté onions until translucent.
Add minced garlic and cook for sixty seconds until fragrant.
In a large bowl, combine shredded chicken, onion-garlic mixture, and half of the buffalo sauce.
Toss the drained potatoes with the remaining buffalo sauce and spice blend.
Spread the seasoned potatoes into the bottom of the prepared baking dish.
Layer the chicken mixture evenly over the potatoes.
Top with the shredded cheddar and mozzarella cheese.
Bake for 45 minutes or until the cheese is melted and golden-brown.
Remove from oven, garnish with fresh green onions, and serve hot.
Notes
Par-boiling the potatoes is crucial for ensuring they cook through perfectly without becoming mushy. For extra heat, add a few dashes of hot sauce or red pepper flakes to the chicken mixture. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
