Ingredients
12 large flour tortillas
2 cups shredded cooked chicken (rotisserie chicken recommended)
8 oz softened cream cheese (Neufchâtel for reduced fat)
1/2 cup buffalo sauce (adjust heat as needed)
1/4 cup ranch dressing
1 cup shredded cheddar cheese
3 tbsp milk
2 tbsp chopped green onions (optional)
3/4 cup all-purpose flour
1 tsp garlic powder
Cooking spray
Instructions
Preheat oven to 375°F (190°C)
In a bowl, mix cream cheese, buffalo sauce, milk, and ranch dressing until smooth
Spread 2 tbsp of the chicken mixture onto each tortilla
Top each with 2 tbsp shredded cheddar
Roll tortillas tightly, tucking in edges
Place pinwheels seam-side down on a baking sheet sprayed with cooking spray
In another bowl, combine flour, garlic powder, and remaining ranch dressing
Roll pinwheels in the flour mixture to coat
Bake for 15-20 minutes until golden and crispy
Notes
Ensure tortillas are room temperature for easier rolling
Use refrigerated cheese for better melting
Add more buffalo sauce for extra heat
