Ingredients

6 slices halal turkey bacon or 1 cup crumbled tempeh
1 cup cubed cheddar cheese
1/2 cup sliced red onion or 3 shallots
2 tablespoons mayonnaise
1 tablespoon white vinegar or lemon juice
1 teaspoon sugar
1/4 cup sunflower seeds or sesame seeds/walnuts


Instructions

Chop broccoli florets into bite-sized pieces
Cook turkey bacon/tempeh until crisp, drain on paper towels
Whisk mayo, vinegar, sugar, and salt until emulsified
Toss broccoli with oil and roast at 425°F for 12 minutes
Combine greens, broccoli, cheese, and onions in a bowl
Add cooked turkey bacon/tempeh, sunflower seeds, and dressing just before serving
