Ingredients
8 oz (225g) rotini or fusilli pasta
8 oz (225g) turkey or halal bacon substitute, chopped
4 cups romaine lettuce, chopped
12 oz (340g) cherry tomatoes, quartered
¾ cup mayonnaise or vegan alternative
¼ cup ranch dressing or yogurt-based mix
2 stalks green onions, thinly sliced
1 tsp white vinegar
1 tsp Dijon mustard
½ tsp salt
¼ tsp black pepper
Instructions
Cook pasta al dente; cool completely.
In a large bowl, combine cooked pasta, romaine, cherry tomatoes, and cooled bacon substitute.
In a small bowl, whisk mayonnaise, ranch dressing, vinegar, mustard, salt, and pepper to create the dressing.
Pour dressing over the salad and toss to coat.
Top with green onions; chill before serving.
