1 lb turkey breast slices
8 oz mozzarella cheese, freshly shredded
2 tbsp extra virgin olive oil
1 medium yellow onion, finely diced
3 cloves garlic, minced
1 cup bell peppers, diced small
1 cup cooked quinoa or rice
1 tbsp dried Italian herbs (oregano and basil)


Instructions

Preheat your oven to 375 degrees Fahrenheit and grease a rectangular baking dish.
Heat olive oil in a skillet over medium heat and sauté onions until translucent.
Add the minced garlic and diced bell peppers to the skillet and cook for three minutes.
Stir in the cooked rice or quinoa along with the Italian herbs until thoroughly combined, then remove from heat to cool slightly.
Lay the turkey breast slices flat and fill each with a portion of the vegetable and rice mixture, followed by a generous sprinkle of mozzarella cheese.
Roll the turkey slices tightly to secure the filling and place them seam-side down in the prepared baking dish.
Bake for 25 minutes or until the turkey is cooked through and the cheese is melted and bubbling.

Notes
