Ingredients
3 cups old-fashioned rolled oats
1.5 cups milk (dairy or almond)
0.5 cup pure maple syrup
2 large eggs, room temperature
1 tsp baking powder
1.5 tsp ground cinnamon
0.25 tsp salt
0.25 cup vegetable oil or melted coconut oil
1 tsp pure vanilla extract
Instructions
Preheat your oven to 350 degrees F and lightly grease an 8×8 inch baking pan.
In a large mixing bowl, whisk together the eggs, milk, maple syrup, vegetable oil, and vanilla extract until well combined.
Add the rolled oats, baking powder, cinnamon, and salt to the bowl.
Fold the dry ingredients into the liquid mixture until everything is thoroughly coated.
Pour the oatmeal mixture into the prepared baking pan, spreading it evenly to the edges.
Bake for 30 minutes, or until the top is golden brown and the center is set.
Remove from the oven and allow the squares to cool in the pan for at least 15 minutes before slicing into 12 even squares.
Notes
Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 2 months. You can add 0.5 cup of walnuts, berries, or diced apples for extra texture and flavor. Always avoid using instant oats as they will become too mushy during the baking process.
