Ingredients
1 large (8-16 oz) double-cream brie wheel
1 cup fresh cranberries
3 tablespoons maple syrup
2 tablespoons water
1 teaspoon orange zest
1 teaspoon fresh thyme
1/4 cup chopped pecans
1 sheet puff pastry (optional)
Instructions
Preheat your oven to 375 degrees Fahrenheit.
Combine cranberries, maple syrup, and water in a small saucepan over medium heat.
Cook until the berries burst and the mixture thickens into a jam-like consistency.
Stir in the orange zest and fresh thyme leaves, then remove from heat and set aside to cool.
Score the top rind of the brie lightly in a crosshatch pattern to allow heat to penetrate.
Place the brie on a parchment-lined baking sheet or in a specialized brie baker.
Bake for 12 to 15 minutes until the cheese is soft and slightly runny.
Top with the prepared cranberry mixture and chopped pecans before serving.
Notes
You can substitute honey for maple syrup if preferred. Rosemary makes a great alternative to thyme for a more pungent herbal note. Ensure the brie is at room temperature before baking for an even melt.
